Recipe Test: Stuffed Tomatoes with Mushrooms, Parmesan & Spinach

INGREDIENTS:

  • Tomatoes
  • Porcini Mushrooms
  • Olive oil
  • Spinach
  • Thyme
  • Lemon
  • Ricotta
  • Parmesan
  • Nutmeg
  • Egg
  • Black Pepper
  • Dijon mustard
  • White wine vinegar
  • Basil 
Gotta love the internet!  How else would I run across a recipe from the UK?  


Above are the cute little guys on their way into the oven!  Below after they were done & doused in the dressing.  


I figured Hubby would eat several since he'd been on the same diet as I have been all day.  He surprised me by only having two so I ended up with leftovers.  I guess the Broccoli soup for lunch made him happy enough he still felt satiated. 


They needed a bit more seasoning because the tomato kind of waters down the flavor of the stuffing but they even worked well as leftovers for dinner the next night.  Below without their hats so you can see the innards. 


See why they need their hats?  They taste better than they look I promise!
