Recipe Test: Black Bean, Avocado, Cucumber & Tomato Salad

INGREDIENTS: 
  • English cucumber
  • Tomatoes
  • Avocados
  • Black beans
  • Red onion
  • Cilantro
  • Lime
  • Salt & Pepper

Simple flavors and simple to make!  Used it as a side to the Corn Cakes but it was good enough to eat on it's own.

  1. Ooh! That salad is the goods, though Avocado is one of my favorite foods. I like to make this kind of a mix, it can vary as to what is in season, and place in a soft tortilla shell. It is also good with organic tortilla chips. I love a good guacamole too, and just so easy to prepare. It's just avocado, onion and tomato chopped, fresh cilantro, and a good squeeze of lime. Put some Cumin in there for flavor, and mash or mix it up. I will make refried bean tacos and add the guacamole inside or on top. Also excellent with tortilla chips! I think I could live on the stuff, and just talking about it makes me hungry. Thanks for sharing! You are becoming a chef there!
